Happiness Is A Cup Of Tea…And Cake!

There is nothing better than a good cup of tea! It’s what you make when a friend pops by or when you visit Mom on the way home from the shops, when some unexpected news needs consideration or when solving a work challenge. But it’s not really just about the beverage is it dear reader? Your steamy cuppa is usually accompanied by heartfelt conversations, quality time with friends, a me-moment all to yourself…and let’s be honest a slice of cake! Tea has a long history, dating back to 2737 BC in China when some leaves of Camellia sinensis (the plant still used to manufacture tea today) accidentally dropped into Chinese emperor Shen Nung’s pot of boiling water. Much has happened in the evolution of tea during the intervening years. Tea became widely used in China, followed by Japan and then it was subsequently imported to the West by the Dutch and Portuguese. Tea only became fashionable in Britain in the 1600s, but it was so heavily taxed that smugglers made a good living by illegally trading in tea. An astonishing organised crime network had developed by the late eighteenth century, importing more tea than the legal trade. In 1784, reduced taxes made tea more affordable for the British public, and taxes were finally abolished in 1964 – a mere 56 years ago. We’ll drink a cuppa to that long-awaited decision!

There are many different types of tea, from true teas to tisanes which are infusions from herbs, flowers, leaves and bark. True teas come from Camellia sinensis and include black, white, green, oolong, pu’erh and a rare yellow tea. When making tea, don’t forget to give it time to steep in boiling water (three to four minutes). Pouring tea from a beautiful teapot into china cups or mugs and serving with a piece of Château Gâteaux is perfection on a beautiful plate.
