As you know dear reader we are nuts about cake! Something else we can’t live without are well, nuts. Nuts are nutritious and delicious. Nuts complement the texture and taste of many scrumptious meals – Thai green curry with cashews, mixed chopped nuts in your muesli, almonds in a Mediterranean salad, coconut shards and tangy fruit slices scattered on your morning bowl of yoghurt or a pick-me-up snack pack of nuts in your child’s (or your) lunch box. Just imagine what nuts do to a cake – takes it to the next level, we promise, like our super Swiss Carrot Cake, which is finished off with a generous sprinkling of diced tree nuts and is fabulously fresh after defrosting from our freezer or yours!
Amazing almonds are a chef’s best friend. They are also a home cook’s best friend. Who would have thought that tasty little almonds come in so many shapes and forms: raw, roasted, salted, slivered, blanched, flavoured, ground, as marzipan, as an essence or turned into milk or butter?! Our pâtissier has made the most of everything almonds have to offer. Roasted almonds are sprinkled over the top of every Mississippi Mud Pie – so crunchy and moreish, and marzipan is layered in our wonderful Walnut Truffle. The first bite of our Southern Red Velvet or our Southern Red Velvet Heart will give you a mouthful of crushed almonds and coconut macaroons. Heavenly hazelnuts are small and round. Most of us know their sweet and woody flavour from eating nutty flavoured chocolate spreads, but their actual claim to fame is how they pair with chocolate, bringing out a unique, more-ish nuttiness. Our most delicious Mozart is layered with hazelnut praline, and our Mississippi Mud Pie features a thick top layer of decadent hazelnut and chocolate mousse. We think you need to serve something beginning with ‘M’ from Chateau Gateaux when next you meet up with mates. Whatever you choose will be a winner… mmmm.
If you’re a nutter like us and want to keep your supply as fresh as possible for as long as possible, you need to buy whole nuts and chop, slice or roast them as required. When needed, keep them in a sealed container in the fridge. However, the best place for a stockpile of nuts is in the freezer.
They will stay fresh and crunchy for at least a year that way, and probably longer, especially if they are snuggled up on a shelf in your freezer next to one of our Daily Delights, Celebration Creations, Mini Collections, Signature Cheesecakes or Variety Packs. TOP TIP: decorate your cake creation with chopped or whole nuts. You can do this by carefully placing whole nuts around the top of your cake in a pretty pattern or by sprinkling a mixture of different types of chopped nuts onto the centre of your cake. Chocolate and nuts also make a great combination!
Welcome walnuts into your life. According to a 2014 study published by The Journal of Nutrition, they are the perfect brain food. The polyunsaturated fats and polyphenols in walnuts are associated with enhanced brain health, decreased oxidation and inflammation, and improved brain health function as one grows older. What amazing news, no one can say no to a little help in this department can they! Walnuts can be baked into any cake, but we have perfected the art in our Walnut Truffle – a walnut cake layered with chocolate sponge, marzipan almond paste and mocha cream and covered with a rich dark cocoa ganache. Clever coconuts can be classified as a fruit, seed or nut, but in our view, they are tree nuts. After all, every island scene features a palm with coconuts high up among the leaves. Not the easiest nut to pick for sure, and not the easiest nut to break into, but once you do, what a treat - tempting tropical flavours and mildly sweet and nutty. Our Caramel Velvet is covered in it, and our Peppermint Caramel Tart is made with coconut cream for extra special creaminess and yumminess.
