Sensational Taste and Fabulous Flavour

This statement applies to every single Château Gâteaux cake that you have the privilege of eating. Whether you are tucking into one of our decadent Self-Saucing Puddings or slicing into one of our Celebration Creations for dad’s birthday, every mouthful will more than satisfy your tastebuds. In the moment you simply want to enjoy and savour the flavour of your Château Gâteaux treat of choice, right? But it is fascinating to know the science behind taste and flavour. Join us this week on our taste (and flavour) test.

Taste is one thing – sweet, sour, bitter, salty and umami (savoury). Cells in our tastebuds, the roof of our mouth and inside our cheeks recognise these tastes. Sensory cells in our mouth are also activated when we eat or drink, and we’re able to detect temperature, spiciness or creaminess. Thank goodness for these special tiny cells; otherwise, we wouldn’t be able to sense and enjoy the fluffy white chocolate mousse of our delectable Cookies & Cream cake!

But here is the next thing – what we perceive as taste is, in reality, a fusion of senses, including sight, smell, touch and taste. And this fusion is known as flavour. We identify food mainly by sight – a strawberry (think or see our Mini Strawberry Cheesecake, and you know its feel and flavour without even eating it – but it’s much better to eat it, you know. Smell plays an even greater role in identifying food – get a whiff of Mom baking bread in the kitchen, and your tastebuds will walk you there to cut and butter a crust! 

Our flavour senses will also tell us when NOT to eat something. If the smell is off, there is no way you will eat that meal. What about a green peach? A squishy banana? Curdled milk? Brown avo? You won’t eat any of these items which you have only smelt or seen; forget about even tasting them!

The appearance of food or beverages needs to be appealing, and taste quality is crucial. Our Black Forest Cake ticks all these boxes with its traditional German chocolate sponge cake layered with sour cherries, chocolate mousse and fresh cream, topped with fine chocolate shavings … yum on a plate. The sensory pleasure we get from our food significantly affects how much we eat and contributes to our overall eating experience. Flavour is the critical component that allows us to feel satisfied and satiated. Proof positive that one of the most important human senses is taste!
