How To Personalise Your Château Gâteaux Cake

Château Gâteaux invites you to reimagine the already delicious cakes you choose from our freezers. Here are some recipes and styling tips that will unlock your potential to personalise your cake experience and take it to the next level. So, cake lovers, let’s go.

Style our legendary dark chocolate and creamy white chocolate Mousse au Chocolat by using three easily obtainable ingredients – 1 packet of chocolate malt or honeycomb balls, 100gm milk or white chocolate and two tablespoons of butter. Defrost your cake, which you’ve cleverly ordered online, before garnishing.

Mousse au Chocolat Styling Recipe:

  • Chop the chocolate balls in half (we recommend popping the odd half in your mouth to keep your chopping strength up).
  • Make chocolate curls by melting the 100g chocolate with two tablespoons of butter (break the chocolate into small pieces and place in a microwave-safe bowl with the butter. Microwave at 70% power for 1 minute. Remove and stir it. Continue to microwave in 30-second increments, frequently stirring, until the chocolate has fully melted.
  • Spread the melted mixture onto a baking sheet. Place in the fridge until firm (3-4 mins) and scrape the chocolate into curls using the spatula.
  • Now comes the fun part – place the chocolate balls and curls around the edges of the top of your cake, leaving the smooth centre of the cake visible (or not, if you want to garnish the whole cake).

All you need is a from frozen to fabulous Chocolate Nostalgia cake and fresh seasonal fruit and berries such as figs, blueberries and raspberries. Figs are available from summer through to the end of autumn. They are high in natural sugars, rich in minerals including potassium, calcium, magnesium, iron and copper and are a good source of antioxidant vitamins A and K. Wow, all this packed into a little fig! Back to our Chocolate Nostalgia (layered with rich chocolate flavoured mousse, topped with biscuit crumble and dark chocolate ganache).

Chocolate Nostalgia Styling Recipe:
Slice your fruit into halves, quarters, and smaller pieces. Place the biggest pieces of fruit in the centre of the cake, then work your way out in a circle. Repeat the process with the smaller slices of fruit and whole berries. For a tangy, fruity flavour, serve each slice of cake with a generous spoonful of tart berry coulis to complement the rich and decadent chocolate.

A coulis is a thick sauce made from pureed fruit of any kind. We’ve used a different coulis recipe in the making of our mini Strawberry Cheesecakes. Pop into any of our convenient stores to pick up these big on flavour taste sensations.

Here is a ridiculously easy raspberry coulis recipe which can be kept in the fridge for a week (or frozen for later use). The three simple ingredients are half a cup of sugar, three tablespoons of water or orange juice and 400 grams of frozen raspberries (thawed)

Berry Coulis Recipe:

  • Combine sugar and water (or orange juice) in a microwave-safe bowl. Stir to combine. The mixture will be very thick.
  • Cook in the microwave on high power for two minutes. Stir for 5-10 seconds to ensure that the sugar has dissolved.
  • Combine raspberries and hot syrup in a blender. Blend until the mixture is smooth and pureed.
  • Pour puree through a strainer over a medium-sized bowl. Press on the solids with the back of a rubber spatula until all the liquid has been extracted. This will take several minutes as the mixture will be thick.
  • Discard the seeds.
  • Pour into a bowl and pair with your Chocolate Nostalgia.
